Smokey Chipotle Ketchup Win International Acclaim!

August 2, 2011, Fredericksburg, Texas. Fischer & Wieser Specialty Foods, Inc. from Fredericksburg, Texas is celebrating after winning a prestigious 2011 Great Taste Award. Fischer & Wieser Specialty Foods, Inc. has been presented with a coveted one-star Gold Great Taste Award for its Smokey Chipotle Chilli Ketchup.

Starting from a simple beginning as a road-side peach stand, Fischer & Weiser now produces more than one hundred products in the same tradition as their first jar of peach preserves. Nestled in the fruitful farmland of the Texas Hill Country, Fischer & Wieser Specialty Foods, Inc. is still family owned and operated as well as a bustling international company that has become the #1 specialty food company in Texas.

Operating on the simplest truth—produce a quality product and loyal customers will embrace it—helped to launch the company’s flagship sauce, The Original Roasted Raspberry Chipotle Sauce®, into stardom by winning NASFT’s prestigious award for Outstanding New Best Seller in 1997, and has since garnered numerous awards.

Fischer & Wieser gourmet items are available throughout America at specialty food stores, club stores and grocery stores, online and internationally in Canada, Mexico, and the United
Kingdom. Case D. Fischer, CEO and President said: “We are delighted with this award.
Winning a Great Taste Award recognizes the hard work and dedication that goes into making superb food and drink. Our Smokey Chipotle Chilli Ketchup can be considered a gourmet dipping sauce, but also used as ordinary ketchup. Handcrafted with chipotle chilies, Roma tomatoes, garlic, onion and white wine vinegar, this ketchup has a Southwestern flair that once tried, will cause you never to go back to ‘regular’ ketchup again!“ It has previously won the Golden Chile Award in the Ketchup Category in The Chile
Pepper Fiery Food Challenge, 2010.

The Great Taste Awards, organised by the Guild of Fine Food, are now in their 18th year and going from strength to strength. 7481 products were entered from 1600 companies for the 2011 Great Taste Awards. It took 350 experts 34 days to blind taste all the entries and decide which entries would achieve the coveted one, two and three star gold awards.
The Great Taste Awards judging standards, devised by the Guild of Fine Food, are the most rigorous in the UK. To achieve the 3-star rating a minimum of 20 -more often 30 - judges need to be in complete agreement that the food delivered that indefinable ‘wow’ factor. All the judges’ comments are made available to producers. If no gold is awarded, they need to know why.

Bob Farrand, Chairman for The Great Taste Awards, said: “Winning Gold in the country’s largest and most respected independent food accreditation scheme is a massive pat on the back for any producer - independent proof their products are of the highest quality. We provide constructive feedback from our expert judging teams and for many, winning 1, 2 or 3-star Gold is exactly what’s needed to help grow their businesses, even during a recession. Every winner should feel very proud that their hard work has been rewarded.”

The four regional nominated foods for each of the Great Taste trophy winners have been announced by the Guild of Fine Food and the identity of the regional and national winners and the 2011 Supreme Champion remains a closely guarded secret until the night of 5th September when all will be revealed at the invitation only awards presentation dinner at London’s Royal Garden Hotel. That is the night we find out who carries away the coveted Golden Fork trophies.

A full list of award-winning products is available at www.greattasteawards.co.uk, and can be searched by region, award or product category.

Iguana Deuces Smoky Chipotlé Pepper Sauce

The Half Moon Bay Trading Company has been making great hot sauces from the rich fertile jungles of Costa Rica Central America since 1992. The Smoky Iguana is their contribution to the smoky chipotle lovers everywhere.

Created to fill a void in the popular Chipotlé sauce category... this ain't some fruity-based chipotlé salsa from up north. "Smoky, savory and kind'a hot" (as the label proudly displays), sums-up this new party and kitchen staple. Featuring a red jalapeño, tomato and red bell pepper base, it uniquely incorporates a rash of fine herbs and spices, as well as cocoa (say what?!) to play with the palate. It's nothing short of pure chipotlé flavor heaven. Put on a "Daiblos Locos" CD, chill down some Pacificos and fire up the parrilla... cause where's there's smoke there's fire!

Major Flavor Note: The Smoky Iguana Pepper Sauce is a pourable version of the chunkier Smoky Iguana Salsa, both share the same great flavor profile. Muy Claro?

Smoky Chipotlé Pepper Sauce is also available in the 2oz. deuce size.

While the 2oz. size is certainly portable, I'm not sure that 2 ounces of chipotle sauce in enough for more than a single meal. If you get the cute little deuce size, make sure you get at least a six pack!

BULL'S-EYE Smokin' Chipotle BBQ Sauce

I almost never advocate for the commercial giant brand, and that would most definitely be due to the fact that they usually suck.

Kraft Foods however seems to have done us right. Aside from some high fructose corn syrup the ingredients are pretty clean, although I don't see chipotle peppers in the ingredients:

Ingredients: Tomato Puree, HFCS, Molasses, Vinegar, Salt, Modified Food Starch (less than 2%), Natural Smoke Flavor, Mustard Flour, Dried Onions, Spice, Dried Garlic.

The aroma of this sauce is smoky and sweet and you can clearly detect the molasses onion and garlic.

The sauce is quite flavorful with plenty of smoke to cut some of the sweetness, however the heat level is definitely that of a grocery store brand. If you are a total Chipotle-head you will need to fortify with more peppers to meet your needs.

Overall this is pretty good eating sauce and at the average price of $2.99 for 18oz. it is certainly budget friendly. If your looking for a decent grocery store brand that has the kick of smoky chipotle peppers(spice), BULL'S-EYE Smokin' Chipotle BBQ Sauce is worth a try.

Kraft's Bullseye website gives us the following recipe to showcase thier BBQ sauce:

Sizzlin' Chipotle Cheddar Burger

Prep: 10 min.
Total: 25 min.
Makes: 4 servings, one cheeseburger each.

1 lb. ground beef
1/4 cup finely chopped red onions
1 clove garlic, minced
4 hamburger buns, split
1/2 cup BULL'S-EYE Smokin' Chipotle Barbecue Sauce divided
4 KRAFT DELI DELUXE Sharp Cheddar Cheese Slices
4 lettuce leaves
1 medium tomato, cut into 4 slices

PREHEAT greased grill to medium-high heat. Mix meat, onions and garlic; shape into four patties.

GRILL patties 8 min. Turn patties; brush with 1/4 cup of the barbecue sauce. Grill 4 min. or until patties are cooked through (160°F). Brush cut sides of buns with remaining 1/4 cup barbecue sauce; place, cut-sides down, on grill. Grill 1 to 2 min. or until buns are lightly toasted.
Top each patty with 1 cheese slice; grill an additional 1 min. or until cheese begins to melt.

COVER bottom halves of buns with lettuce and tomatoes; top with cheeseburgers and tops of buns.

Smoky Chipotle Peppers Makes Dave's Sauce A Winner!

Dave's Gourmet uses fire-roasted sweet red peppers and chipotle chiles to give this sauce a delicious, slightly smoky flavor that will enhance any dish.

Although Dave's Roasted Red Pepper & Chipotle Hot Sauce contains some habanero pulp, this sauce is one of Dave's less-fiery creations and is more of "warm" hot sauce where flavor takes precedence over fire. This was made evident when
Dave's Roasted Red Pepper & Chipotle Hot Sauce took first place in the FDM Hot Sauce Shoot Out, medium chile category.

Use Dave's Roasted Red Pepper & Chipotle Sauce on pork, lamb, hamburgers, chile, and any other foods that will benefit from some smoky heat.

Dave's Gourmet Roasted Red Pepper & Chipotle Sauce can be purchased in 5oz jars or as part of the Dave's Gourmet Spicy 6 or 12 Pack.

Dave's Gourmet's site
says: Roasted red peppers and smoky chipotle peppers give this sauce a wonderful fire roasted flavor that just won't quit. Try it on your burgers, tacos, sandwiches, burritos, pizza and pasta.

Ketchup Redux; The Russian River Way

If there was ever an existing condiment that takes change well, ketchup would be that condiment. You can squirt or pour the old standby on your fries, burgers, or dogs, but that's pretty much the limit of its humble being.

Chef Ken at Russian River Fine Foods quickly realized the potential for improvement and took charge with this zesty version of the American Classic.

Chipotle Ketchup
is a new and enjoyable twist on one of America’s most popular condiments. With just a hint of sweetness and a bit of smoky spice from the peppers, this sauce is a compliment for every thing from hamburgers and french fries to omelets or eggs cooked any style, but the reduced sweetness and the smoky, mildly spicy element lends itself to an even greater versatility.

Chef Ken has created many recipes that incorporate the use of his smoky Chipotle Ketchup. Here is a simple recipe that shows off the wonderful, subtle yet complex flavors of Chipotle Ketchup:

Smoky Chipotle Lime Prawns

Ingredients:
12 medium prawns (peeled and de-veined)
4 ounces Chipotle Ketchup
Juice of ½ of a lime
2 tbsp olive oil

Directions:
Marinate the prawns in the Chipotle ketchup for 24 hours. After the prawns are marinated, heat a sauté pan till it gets very hot then add the oil.

Take the prawns out of the Chipotle Ketchup and gently place them in the sauté pan. Sauté the prawns on one side for 2 minutes.

Turn the prawns over and add the chipotle ketchup you used as the marinate.

Squeeze the lime juice in as well. Continue to sauté for another 4 minutes. Now you are ready to serve.

Willie B's Texas Style BQ Sauce; Blazin Hot and Smokey Chipotle

We found this smokey chipotle BBQ sauce at Willie B's who claim to be "Authentic Texans". Seems like both flavors are smokey chipotle but the Blazin' hot is Chipotle'er!

Texas Style Smokey Chipotle BBQ Sauce- in Texas, barbecue is king. This is a traditional Texas sauce...thick
and slightly sweet with chipotle peppers added to give it a warm smokey flavor. This sauce is delicious on any
kind of meat, as a marinade, or a sandwich topping. Try it on brisket, chicken, fish, or pork.

Texas Style Blazin' Hot BBQ Sauce- don't let the name fool you, this one is REAL good. And only the wimpiest
out there will find it too hot. We take our Smokey Chipotle BBQ Sauce and simply add more chipotle pepper
to it to give it more heat.

1 tablespoon chopped roasted peppers packed in jar
1 tablespoon minced canned chipotle chiles

Crab Cakes
1 cup Masa Harina (corn flour)
12 ounces crab meat

3 tablespoons plus 1 teaspoon fresh lime juice
1 tablespoon grated lemon peel

2 tablespoons olive oil

Heat oil in heavy large skillet over medium-high heat. Add crab cakes in small batches and cook until browned and heated through, about 2 minutes per side. Transfer to plates. Serve with aioli.

Monty's Smokin' Chipotle BBQ Sauce... Awesome!

Monty's Gourmet Foods has been around for quite some time now. Monty has collected many awards for his man products and recently the Smokin' Chipotle BBQ Sauce has won awards in two categories atFiery Food Challenge the; BBQ Sauce-Smoked, and BBQ Sauce-Chipotle.

Even though this site is dedicated to the smoky chipotle pepper we'll cover all four of Monty's BBQ sauces. I think we should start with the most standard flavor; Smokin’ Mesquite BBQ Sauce. It is a blend of molasses, herbs, and spices, and all the other goodness that Monty put in. This is the favorite for the BBQ lover; it is sticky and sweet and delicious, with just the right amount of smoky flavor. While this is a fantastic finishing sauce and makes a perfect glaze for your ribs, brisket or what have you, it is not the most daring flavor of the bunch.

The Smokin’ Roasted Garlic BBQ Sauce is the Garlic Lovers Dream. It shows all the qualities of the mesquite sauce minus the molasses; and the garlicky goodness takes over and imparts the magical garlic joujou to anything you dip, brush, or pour this tasty sauce on. I can’t get enough of this one myself!

Chipotle, A word that simply means smoked pepper. It’s not that simple when it comes to Monty’s Smokin’ Chipotle BBQ Sauce. This is a marriage made in heaven. Just the right amount of heat has been joined to just the right amount of sweet. What more could you want? If you like your BBQ spicy Monty has created the perfect sauce for you!

The final product in this line is the Smokin’ No Sugar Added BBQ Sauce. I gotta say this is the first sugar free sauce I have tasted that actually tastes like BBQ Sauce. This sauce is diabetic friendly, carb friendly and most importantly taste bud friendly. Actually it’s Delicious! I have had over 20 people taste this sauce and none of them would believe it is sugar free! I even showed them the label and they still don’t believe it. It tastes that good!

California Blends Sweet Smoky Chipotle Hot Sauce

Sweet Smoky Chipotle – Medium Hot- The best seller of our product line is a unique take on BBQ sauce. It has complex layered flavors that combine smoky sweetness and peppery heat levels that come from the variety of ingredients we use. We start with a classic BBQ flavor from Molasses, Honey and Brown Sugar added to Tomato Paste. We then add the smoky chipotle pepper and for an added kick of BBQ flavor, some “liquid smoke”. We then add our special Habanero Blend mash to give it that intense habanero heat. The flavors of this sauce intensify in a surprisingly pleasant way making it almost impossible to stop eating.

Here is an excerpt from a review on Hot Sauce Blog. Follow the link to read the entire review.

It seems only fitting that I review a California Blends Hot Sauce while in California. When this package first arrived I couldn’t be more excited, you see, California Blends comes out of Chico, CA - a town that I practically grew up in. My brother and I used to hit Chico for all sorts of mischievous activities, mostly hanging out in the Chico Mall or exploring Bidwell Park. So suffice to stay, the city of Chico is near and dear to my heart and I couldn’t be happier to review a hot sauce that hails from there.

The first in the California Blends product line up to bat was the Chipotle Sweet & Smoky Hot Sauce - and I’ll admit, I first tried this the day it arrived in NYC, I couldn’t wait until we got to California - but it did make the trip from NYC to LA with me.

Description from the bottle: Spice up your meals with some fresh California flavor! Use our smoky Chipotle Habanero Blend at your next BBQ for a fiery flavor that’s sweet with honey. Also great in pasta, sandwiches, sauces and dips. Shake it on and enjoy!

The Cheech Smokin' Chipotle Hot Sauce

With the new Cheech & Chong Comedy Tour; "Light Up America & Canada" on its way, the Cheech's hot sauces have found a rebirth in popularity. Our favorite is of course; the Smokin' Chipotle Hot Sauce!

The Cheech mashes jalapeno, cayenne, tabasco and the fiery habanero (the hottest chile in the world) peppers together to age, then adds sweet molasses, sugar cane vinegar and a splash of rum to create a robust sauce that's SMOKIN' HOT & full-bodied with zesty flavor - treat like a fine wine - the older it gets the better it tastes. Great with fish-n-fowl, beef, pork, soups, dips and Mexican-style cooking. The Cheech Smokin' Chipotle Sauce is "Waatsappenin."

Chocopotle Chipotle Hot Sauce By Scorpion Bay

Smoky. thick. Sweet. And a slight hint of chocolate. The Scorpion Bay Hot Sauce Company combined them all, and added a few sprinkles of our own secret ingredients to bring you—Chocopotle! It’s perfect as a marinade for pork or Portobello mushrooms. Thinking about a BBQ? Brush it on tofu, meat or whatever you have grilling over the coals. Once you’ve tasted this unforgettable hot sauce you’ll find yourself saying, “Chocopotle, where have you been all my life!”

Recipe - Chipotle Chile :
Serves 4 to 6

3 pounds chuck roast (1 inch cubes or ground)
2 large onions, diced
1 tbs olive oil
5 to 8 cloves of garlic, chopped
Salt/pepper/Chile Powder
1 bay leaf
1 bottle Scorpion Bay Chipotle Hot Sauce
4 cups cooked pinto beans (If you are purest you can keep the beans separate and add as needed to cool down the fire)

Heat olive oil. Sauté garlic and onions. Add cubed chuck roast brown. Add chile powder to add enough to give it a good red color. Add bay leaf. Gradually add Scorpion Bay Chipotle Hot sauce, add enough so that you begin to get a good smokey Chipotle flavor and it is hot enough for your individual preference. Salt and pepper to taste. Reduce heat cover simmer, the longer the better at least one hour. Serve with cold beans on the side add as needed to reduce the heat
